Ingredients:
1/2 lb. hard Mexican Chorizo, casing removed and crumbled
1/2 lb. ground beef
1-2 tbsp. grated yellow onion with the juice
1 tbsp. Worcestershire sauce
1/2 tsp. cumin
salt and pepper
1/8 cup finely chopped red onion
1/2 jalapeƱo pepper, seeded and chopped
1/2 lime, juiced
1 small avocado
1/2 ear of corn, kernels scraped from cob
1 tbsp. finely chopped cilantro
1 clove garlic, grated
2 burger buns, split
1/2 tomato, sliced
a handful of tortilla chips
Directions:
1. Heat grill to medium high.
2. In a large bowl, combine chorizo, beef, grated onion and
juice (The onion juice helps to keep the burger moist), Worcestershire sauce,
and cumin. Season with salt and pepper. * Make sure you buy the hard Chorizo
for this. We made the mistake of
purchasing the softer, uncooked variety the first time we made this and it was
a mess; the burgers completely fell apart on the grill*
3. Form mixture into 2 patties (press the patties so that
they are thinner in the middle for even cooking; when the burgers cook, their
middles will expand to give you evenly cooked burgers).
4. In a medium bowl, combine red onion, jalapeno and lime
juice. Season with salt and let stand for 10 min.
5. Mash in the avocado, then stir in the corn (If desired,
the corn could be roasted before hand to add even more flavor), garlic, and
cilantro.
6. Cook burgers on grill for 8 to 10 minutes.
7. Build the burgers with the tomato, chips, and guacamole
and serve.
