Ham and Peas Casserole
Ingredients:
1/4 lb. (about 3/4 cup) baked ham, diced
1 cup cornbread, cubed
1/2 cup frozen peas, thawed
1/2 tsp fresh thyme, chopped
1 cup milk
2 eggs
Salt and pepper, to taste
Directions:
1.Preheat oven to 350 degrees and butter a 1.5 qt. baking dish (You can also use two individual-sized baking dishes).
2. In a mixing bowl, whisk the milk, eggs, thyme, salt, and pepper.
3. Mix in the ham, peas, and cornbread.
4. Pour mixture into baking dish(es) and allow to set up for 15 min.
5. Top mixture with a bit more cracked black pepper and bake for about 40 min. Allow to cool for a few min. before serving
